Lambayeque – For those raised on the homogenized, pasteurized and sanitized bounty of the modern American supermarket, the cuisine of Peru can be a formidable obstacle. The food is sold in open air markets with little precautions for health and safety. It is a glorious assault of colors, sounds and smells completely alien to most visitors. Food is sold by more exact amounts and then bought for consumption that day. The business of the market starts early but ends before mid-day when temperatures rise and flies tend to congregate. Wastefulness is a luxury and the problem of garbage is limited as a result.
