– The most famous, well... infamous, dish from Peru has to be Cuy - or, for we English speakers, guinea pig. Reports of the dish bring out strong reactions in tourists but I have found the dish to be quite enjoyable, sort of the Cornish Game Hen of the mammalian kingdom. Of course it helps to have as good a cook as Maria Rodriguez Linares preparing it for you as well. The dish has very old roots in Andean cusine and has been an important part of the diet there for hundreds of years. I wrote a bit more on the subject in my blog but the only thing you have to remember is that it's only wrong to eat it if you have named it first. |
