Lambayeque
– The
frigid waters of the Humboldt Current flow northward along the coast of
Peru creating one of the richest fishing grounds in the world. And fish
is a fundamental part of the cuisine. If there is a national dish, it
is ceviche which is essentially fish cut into small chunks that
is cooked by sitting in lime juice for a period of time. The key to the
dish is having fresh fish available and relatively cheap. That describes
Northern Peru exactly. Walk into a market any morning and the catch brought
in just an hour or two before is already being sold to the savvy shoppers. |
